I am making another breakfast omelet with a slightly different set of ingredients. The green stem onions were from a recent farmer’s market.
The sausages and cheese were on sale.
I chopped the green stem onions and the regular onion and put them into a dish with oil. I always fry in oil.
I put the sausage links in with the vegetables. They are just starting to fry here.
Here they are coming along. I like to glaze the veggies and links a bit, so I fry hard. Frying hard also saves time.
I pick out the sausages and put them with a can of hot pinto beans.
Then I mix the eggs into the vegetables, which are browned and glazed by now. I also mixed in the Mozzarella cheese to melt with the dish.
When the eggs are done, slide them onto the beans and sausages. Here is the meal shown below.
It tasted fabulous!
