Braunschweiger and cheese sandwich
Here is a sandwich I made just a few days ago. It consists of that god-awful German word braunschweiger. It is sometimes called liverwurst. I do not know of its health benefits, and is something that I eat on occasion. I added four slices of Mozzarella cheese and pickles were also on sale so I added them also. The bread is good multi-grain bread and has 4g of fiber per slice. I actually don’t eat sandwiches a lot, but when and if I do, I tend to use good bread, for health reasons. This simple and fast dish was also quite tasty!
Yerba Mate in soups
Some of my previous posts have discussed yerba mate. It is a neat food to experiment with. I find myself using it to make teas, and it can be put into almost any food. Sometimes I put it into vegetable dishes. Here in the photos below, I am putting it into Campbell’s soups. First I have added 2 tbsp. of yerba mate (with stems) to chicken noodle soup.
And the picture below shows yerba mate in Campbell’s tomato soup.
I had both of these soups together and it made a nice meal. The total of 4 tbsp. of yerba mate is a healthy addition that has many excellent health benefits.
Cheese and wiener sandwich
When you’re hungry there is nothing like a tasty wiener sandwich with cheese and mustard. The bread here is high fiber bread, but otherwise this is not the healthiest of meals.
Yerba mate tea
Here I am having a yerba mate tea as shown below.
This tea is easy to make. I put a tablespoon of stem less yerba mate into a cup and fill with water. Then microwave it for around 1:20. It makes a healthy and tasty tea.
One can also use a tea bag, although I ingest the tea directly. To me, this adds to the overall effect.

Breakfast omelet
I made this omelet about a week ago. It contains an assortment of chopped greens.
I tend to put eggs into vegetable dishes, rather than putting vegetables in egg dishes. I guess you can still call this an omelet though. It tasted great!
Broccoli with sour cream
A favorite is sour cream with broccoli. Just slice up the broccoli and dip into sour cream. I use light sour cream to save calories.
The broccoli is grown in a local “home” garden.
Chili with Hunt’s tomato sauce
This is a chili that I made maybe around a week ago. It is similar to many of my chilis, having onions and kale in it. What is slightly different here is that I am using Hunt’s tomato sauce and Bush’s chili beans.
Wiener and kale and cream cheese bagel
I do lots of weird cooking things. I so happen to have made a really “strange” bagel. Well, I won’t be too embarrassed. I made this bagel several months ago when purple kale was obtainable from the farmer’s market. I then put on cream cheese and added wieners. It was quite tasty. Although the wieners and cream cheese are not the healthiest, this is a tasty meal that one can have probably occasionally.
Chili with fresh farmer’s market vegetables
Here are some pictures that correspond to a chili that I made several months ago, during the summer. It was a Saturday and I had just bought many fresh ingredients, such as kale, Swiss chard, onions, and banana peppers from the farmer’s market. When I got back I made a fabulous chili discussed more below.
There is a nearly endless variety to the kinds of chilis you can make. I put just about anything in. Nearly every chili I make is different in some wah. During the summer months when the ingredients are available from the farmer’s market, my favorite things to put into chilis are chopped greens, such as kale and Swiss chard. The meal shown below has both kale and chard. Putting a few slices of (Kraft singles American) cheese is also great for chilis, and another fantastic variation would be to put in a can or two of cream of mushroom soup in place of the tomato sauce and beans. Adding a chopped garlic clove always helps, too. (I did not happen to have one at the time of this cooking.) I frequently “spice up” chilis, and the dish below has some chopped red banana jalapeno peppers; this warms it up nicely. I also spice up chilis with several chopped hot Thai chili peppers.
The chili shown below has chopped fried vegetables consisting of:
- two kinds of onions
- kale (purple)
- Swiss chard
- red banana peppers
- mushrooms
There is nothing in this chili here that is high in cholesterol or unhealthy (that I know of). Putting in a few slices of cheese or a can or two of cream of mushroom soup would add an interesting taste but would diminish the health aspects.
